About

A Manor House Reborn — the story of REIGN at the Fairmont Royal York, and chef Roland Torok-Ducharme.

A Manor House Reborn

When the Fairmont Royal York opened in 1929, it was the tallest building in the British Commonwealth — a grand downtown manor house that has hosted royalty, heads of state and generations of Torontonians. REIGN is its dining room reborn: a restaurant, bar and private-event destination that returns the hotel’s golden-age glamour to the table, one season at a time.

Chef Roland Torok-Ducharme

REIGN’s kitchen is led by chef Roland Torok-Ducharme, whose pedigree runs through Michelin-starred kitchens in Paris and London and the celebrated dining rooms of Marina Bay Sands. His cooking is rooted in classical French technique and Ontario’s finest produce — precise, generous and quietly theatrical, from the raw bar to the live grill.
